Bacon-Wrapped Stuffed Chicken Roll-Ups

This recipe doesn’t require much work, which is why I enjoyed making it. And if you have a vegetable garden growing in your yard, you can add your favorite vegetables to this recipe as well.
Green peppers, red peppers, anything your garden has provided you this season that you'd like to add to this recipe.
Of course for this recipe, it calls for red peppers, mozzarella, ham and bacon to be added inside.
Like always with any recipe I do, I always make it my own and I suggest you do this as well.
As this recipe required mozzarella cheese, and I only had sliced, I cut them into four even long slices instead.
How to make Bacon Wrapped Stuffed Chicken Roll-Ups
I basically turned this recipe into my frugal version, and the result was amazing.
To make 4 servings you are going to need:
- 4 chicken breast, no skin
- 16 uncooked slices of bacon (4 for each one. You can always add more, who am I to judge a bacon lover!)
- 4 even slices of Mozzarella cheese – We had sliced mozzarella cheese and cut them into 4 even long sliced. Now, if you love cheese, I suggest you double the amount.
- 2 slices of cooked ham
- Medium red bell pepper – sliced
- Salt and pepper to taste
- Aluminum foil
Directions:
Pre-heat over to 375F
Butterfly cut open your chicken. Cut the center, not all the way through. You should be able to open the chicken like a book.
Pound the chicken to make it even.
Lay four strips of bacon side by side.
Add red bell pepper.
Add a slice of mozzarella cheese
Add the ham.
Salt and pepper to taste.
Roll the chicken breast until bacon is wrapped all around the outside as well.

Wrap the chicken in aluminum foil.
Bake the chicken for about 25 to 30 minutes.
Remove the chicken from the aluminum foil and cook them in a pan to make the bacon crispy and “good looking!”
Remove meat and let it sit for a bit.
Cut meat into even slices
Serve!
As you can see this recipe is simple and delicious to make. We ate our fabulous meat with pasta on the side.
The fun part is that we had leftovers for the next day for lunch. Not bad for a “wanna-be-cook!” I hope you enjoy this recipe that has become a repeated one for our family and friends.
