Some Puerto Rican dishes are simple to make, and this might surprise many, but one-pot dishes are one of my favorites to make and are super delicious.

What type of rice should I use for Instant Pot Puerto Rican Rice Recipe?
You can use any rice that is available. We use regular white rice located at your local grocery store. Long grain rice tends to do well in the Instant Pot versus short grain, in my opinion.
Do I need Sazon or Sofrito for this recipe?
Yes, you do need Sazon or sofrito for this recipe. It's what makes this a Puerto Rican recipe!
For this recipe, you are going to need Sofrito and Sazon, and if you don’t have sofrito you can find the recipe here or purchase it!
You can make homemade Sazon seasoning recipe MSG-free, gluten-free, filler ingredient free, and salt and sugar-free when you follow this sazon recipe.
I don't have sofrito what can I do?
If you don't have sofrito the best thing I can tell you to do is to use half a cup of onions (chopped) and fresh cilantro.
In the saute mode of your Instant Pot, add a little bit of oil and add the onion and cilantro and saute them until they are tender.
This should give your rice a “sofrito” flavored. Once this is done, add the other ingredients of this recipe.
How to make Sausage Puerto Rican Rice with Pigeon Peas
For this recipe of Sausage Puerto Rican Rice with Pigeon Peas, you are going to need an electric pressure cooker with a rice button. For this recipe, we used an Instant Pot.
What are the ingredients to make Puerto Rican Pigeon Rice with Sausage?
For this Puerto Rican Rice with Pigeon Peas recipe you are going to need the following ingredients:
- Eckrich Smoked Sausage (We used Polska Kielbasa made with pork and turkey)
- White rice
- Sofrito
- Can of pigeon peas
- Packet of Sazon
- Can of tomato sauce (8 ounces)
- Can of diced tomatoes
- Can of corn
- Chicken broth
- Olive oil
- Salt
- Pepper
How to Make Instant Pot Puerto Rican Rice with Pigeon Peas and Sausage
Now that we have the ingredients for the Sausage Puerto Rican Rice with Pigeon Peas, let’s make it!
Seriously this is just a simple recipe to make and you can’t mess this up. So be ready and follow these simple steps:
To begin, make sure you have an electric pressure cooker, we use an Instant Pot.
First, press the Sauté button on your pressure cooker and allow it to warm a bit before adding the next ingredients.
Once the olive oil is warm, not hot, add the sofrito, sazon, and tomato sauce and stir for about two minutes to incorporate the ingredients.
Once the two minutes have passed, go ahead and add the gandules or pigeon peas and sausage and continue to stir.
Stir a bit more, and next add the rest of the ingredients and stir for a few more minutes to make sure everything is incorporated well.
The next thing you must do is press the Sauté button to cancel the function.
Press the Rice button, turn the knob to Sealing, and 12 minutes (if your electric pressure cooker doesn't autocook). If you have an Instant Pot, the Rice button with autocook and will stop cooking once the rice it cooks. Please keep that in mind.
Once the Instant Pot or electric pressure cooker is done, allow it to natural release.

Sausage with Puerto Rican Rice with Pigeon Peas

Ingredients
- 1 pack of Eckrich Smoked Sausage, cut no less than ¼ inches
- 2 cups of white rice
- 2 Tablespoon of Sofrito
- 1 can of pigeon peas, drain
- 1 Packet of Sazon
- 1 can of tomato sauce, 8 ounces
- 1 can of diced tomatoes, any flavor
- 1 can of sweet corn
- 2 cups of chicken broth
- 1 Tablespoon of olive oil
- Salt & Pepper to taste
Instructions
- On your electronic pressure cooker, hit the Sauté button.
- Add the olive oil and sofrito, sazon, and tomato sauce and stir.
- Wait about 2 minutes and add the pigeon beans and sausage and stir. Make sure that all the ingredients are incorporated.
- Add all the ingredients and stir well.
- Cancel Sauté.
- Secure the lid turn the know to sealing.
- Press the Rice button and start. If your electric pressure cooker doesn't have auto rice cooker, press 12 minutes.
- Let is Natural release.
Notes
For this recipe, we used an Instant Pot. The rice button is automatic, meaning that the machine will stop cooking once the rice is cooked. Not all models have this feature, so we recommend 12 to 14 minutes for rice cooking.
