What are the ingredients to make mandocas?

To make this mandocas recipe you are going to need the following ingredients:

  • Ripe plantain
  • Brown sugar (panela)
  • Corn flour (Harina Pan or masa harina)
  • Hard white cheese, shredded
  • Water
  • Pinch of ground clove and pinch of ground star anise
  • Oil

How to make mandocas

Now that you have gathered your ingredients it is time to make mandocas. All you have to do is follow the steps below:

Fill a pot with water. Cook the plantain until soft. Drain and discard the water and transfer the plantain to a bowl to mash.

Mash the plantain and then add the brown sugar and spices. Stir to combine.

Add the cheese and mix until well incorporated.

Slowly mix in the flour and water, alternating between the two. Knead for around 3 minutes or until the dough is soft. Let it rest for 5 minutes.

Divide the dough into 10 balls and roll out until you have a thin log. Tie the ends together to shape the mandocas.

Heat the oil in a pot over medium heat. Cook the mandocas until deep golden brown.

Transfer to a wire rack to drain or a paper towel lined plate. You can season with salt or smear with butter before eating warm.

Ingredients

  • 1 Ripe plantain
  • 2 Tbsp brown sugar (panela)
  • 1/2 cup cornflour (Harina Pan or masa harina)
  • 1/2 cup hard white cheese, shredded
  • 1/2 cup water
  • Pinch of ground clove
  • pinch of ground star anise
  • Oil for frying
