How to make sopa de pollo y platano
Now that you have gathered your ingredients it is time to make sopa de pollo y platano. All you have to do is follow the steps below:
In a small pot over low heat add the chicken breast, chicken stock, cumin, garlic powder and onion.
Bring to a simmer and cook for around 25 to 30 minutes or until the chicken is done. Shred or roughly chop the chicken and add it back to the soup.
Add the corn and plantain and cook for 20 more minutes or until the plantain is fork tender. The plantain will thicken the soup as it cooks.
Divide into bowls and top with chopped cilantro. If you don’t like cilantro, you can omit this step.
