  • 2 tablespoons extra virgin olive oil
  • pinch of sea salt
  • 2 lbs grape tomatoes, cut into quarters
  • 8 oz mozzarella small pearls
  • 1/2 medium red onion, thinly sliced
  • 1 red bell pepper, deseeded, deveined and cut into cubes
  • 1/2 cup basil leaves, chopped, plus more to garnish

Dressing:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 teaspoon oregano
  • 1/2 teaspoon lemon zest
