  • 1 Pound shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1 Onion, finely chopped
  • 1 Garlic clove, minced
  • 1/2 Red bell pepper, finely chopped
  • 2 1/2 cups tomato sauce
  • 2 cups of rice
  • 4 Cups stock
  • Salt and pepper to taste
  • Juice from 1 lime
