Once cool, pop the pieces onto a cookie sheet lined with wax paper and freeze. Once frozen, transfer to a zip top bag. When ready to eat, transfer to a 350-degree oven and bake until warmed through and cirpsy about 10 minutes.

How to make Bolitas de Platano
Now that you have gathered your ingredients it is time to make bolitas de platano. All you have to do is follow the steps below:
The first step is to boil the plantain for 10 minutes. Once soft, drain and transfer to a bowl.
Use a fork to mash the plantain and then mix in the queso fresco, salt and pepper, and masa harina.
Knead the ingredients with your hands until a soft dough forms. If the dough is sticky, you can add an additional tablespoon of masa harina.
Heat the oil in a pot over medium heat. Shape the dough into balls and place in the oil.
Fry for 4 to 5 minutes or until deep golden brown and cooked through.

Bolitas de Platanos or Plantain Balls

Ingredients
- 1 Plantain, ripe and diced
- 1/3 cup of queso fresco
- 3 Tbsp of masa harina or harina pan
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat water in a small pot over medium heat. Once it's boiling. add the plantain and cook for 10 minutes. It should be soft. Drain and discard the water and transfer the plantain to a bowl.
- With the help of a fork mash it. Add the queso fresco, salt and pepper, and masa harina.
- With your hands knead until you have a soft dough. If it's too sticky add 1 tbsp more masa harina.
- Heat the oil in a pot over medium heat. Shape small balls and transfer to the hot oil.
- Fry for around 4 to 5 minutes or until deep golden and done.
