I always like pork rind cracklings as snacks. Sometimes I will include it as toppings on salads, just like when I used it on my Broccoli Salad. The salty-savory taste and crispiness keep me craving for it.

Now, this Keto Pork Rind Nachos is a game-changer. When I tried it, I’m in love! That’s why one of my favorite snacks is pork rinds. More delicious snacks and meals can be created with it. And still, maintain with my very low carb WOE. Can I say it’s perfect?:

And also, I’m so into fajita veggies. So I especially made this recipe into something a bit on its side of the flavor.

What is Pork Rind?

Is anyone not so familiar with pork rind? Sure, you already know it’s made of pork. The word rind means skin. And you are right! It’s pork skin! It is a culinary term for pigskin.

What then?

When you talk about pork rind as a snack, it is synonymous with pork cracklings, pork rind cracklings, and pork skin cracklings.

Pork rind can be made by boiling the cleaned pigskin to soften. Let it cool down, and if there’s any fat, scrape it so that the only thing that remains is the outer layer.

It is cut into bite-size and then dehydrated at a very low temperature until the pieces become dried, brown, and brittle, which may take several hours depending on the type of dehydrator used.

The dried pork skin is then deep-fried at a high temperature of about 400°F (204°C) until it’s puffs out and crispy. 

With 0 carbs, high in protein and fat, this is a perfect snack for Keto dieters.

Do you know that the fat in pork rind has 43% unsaturated? Of which most of those fats are oleic acids. The same fat that is in olive oil.

A little bit about the Keto Diet

For some who may not fully understand what Keto means, it is short for Ketogenic. This is a very low carb, moderate protein, and high-fat diet. The main source of energy for the body being used is ketones instead of glucose.

The ketogenic diet became popular in the 1920s for 2 decades as therapy for children with epilepsy. However, it slowly diminished because of the new drugs formulated for epilepsy.

Nowadays, for over 2 decades, the Keto diet became popular again for children with epilepsy and therapy for other health issues. For example, some doctors and health professionals have advised this diet to improve their metabolic syndromes

The aftereffect is these people lose weight fast. Hence this diet became more popular for this reason.

How to Make Keto Pork Rind Nachos

These are my version of the pork rind nachos! I love fajita veggies, so I served them with a combination of peppers and onions instead of cheese.

I also added avocado (because everything with avocado is better) and a good squeeze of lime juice, plus a sprinkle of chili powder.

They are salty, sour, spicy, and everything a good appetizer should be.

As long as you have the ingredients, making the keto Pork rind nachos is very easy.

Ingredients:

  • 1 bag pork rinds
  • ½ Red onion, sliced
  • ½ Green pepper, sliced
  • 1 Tbsp olive oil
  • ½ Tsp oregano
  • ½ Tsp cumin
  • Salt and pepper
  • ½ Tsp chili powder
  • ½ Avocado, sliced
  • Juice from 1 lime
  • Chili powder and paprika

Directions:

Cook the onion and peppers. Heat the olive oil in a pan over medium heat.

Add sliced onions and peppers and sprinkle with oregano, cumin, chili, salt, and pepper. Cook until soft, around 5 minutes. Remove from heat.

Assembly the nachos. Place the pork rinds in a dish. Top with the cooked onions and peppers. Add the avocado and squeeze the lime juice on top. Sprinkle with chili powder and paprika.

  • 1 bag pork rinds, 5 oz or larger
  • ½ Red onion, sliced
  • ½ Green pepper, sliced
  • 1 Tbsp olive oil
  • ½ Tsp oregano
  • ½ Tsp cumin
  • ½ Tsp chili powder
  • Salt and pepper
  • ½ Avocado, sliced
  • Juice from 1 lime
  • Chili powder and paprika

Instructions
