How to make porotos con rienda

Now that you have gathered your ingredients, it is time to make porotos con rienda. All you have to do is follow the steps below:

Heat the oil in a pot over medium heat. Add the onion and saute until softened, around 5 minutes. Make sure to stir often to prevent the onions from burning.

Add the white beans, pumpkin, and stock, and bring to a boil.

Add the spaghetti and cook for 7 to 10 minutes or until pasta is al dente. Do not overcook, or you’ll have mushy pasta. At this time, your pumpkin should also be tender.

Add the spinach and cook until wilted, one minute more.

Your porotos con rienda is ready to serve!

Ingredients

  • 1 Tbsp oil
  • 1/4 cup red onion, chopped
  • 1 1/2 cups white beans, cooked
  • 1/2 Pound spaghetti
  • 2 cups stock
  • 3/4 cup pumpkin, diced
  • 1 cup kale, spinach or chard

Instructions

  1. Heat the oil in a pot over medium heat. Add the onion and saute until softened, around 5 minutes.
  2. Add the white beans, pumpkin, and stock and bring to a boil.
  3. Add the spaghetti and cook for 7 to 10 minutes or util pasta is al dente.
  4. Add the spinach and cook until wilted, one minute more.

Notes

Some Chileans make porotos con rienda with sausage or chorizo. However, the most common way of doing it in the countryside is this vegetarian option.
